In a medium bowl, mix together 1 tablespoon of Dijon, apple cider vinegar, celery seed, lemon juice and dressing. Flip apple upside down and cut straight down on both sides of core then set pieces aside. Cut off other 2 remaining slices of apple and chop into bite sized pieces and place in a bowl. Chop/slice cabbage and add into the bowl. Stir until well coated then place in fridge to marinate. Cut the 2 large apple slices into slices of equal thickness to make “buns”. Slice chicken in half and place on 2 apple slices. Mix 1/2 Tablespoon of Dijon, basil, stevia and mint together then spread on chicken. Top with remaining apple slices.
