Citrus Chicken Salad
Instructions
  1. Heat water or chicken stock in a skillet over med-high heat. Add chicken and cook until cooked though. Remove rind from grapefruit and chop into 1 inch pieces. Add to skillet, cover, reduce heat to low and simmer, stirring occasionally, for 3 minutes. Toss romance in dressing then transfer to a plate. Top with chicken mixture. Sprinkle with pink salt and some pepper.
